Details Of Bebinca

Bebinca, a cherished Goan dessert, is a multi-layered culinary masterpiece that embodies the region's rich culinary heritage. This sweet delight is a labor-intensive creation, showcasing the dedication and skill of Goan cooks.

Bebinca is made from a mixture of coconut milk, sugar, eggs, and nutmeg. The preparation involves layering this mixture one on top of another, with each layer being individually baked or steamed before the next is added. This meticulous layering process gives Bebinca its distinctive appearance and texture.

Traditionally, Bebinca is baked or steamed in a specially designed clay or metal dish that has multiple compartments. The end result is a dessert with a beautiful golden-brown color and alternating layers of smooth, custard-like richness and a slightly chewy texture.

The combination of coconut, eggs, and nutmeg creates a harmonious blend of flavors – sweet, creamy, and subtly spiced. Bebinca is often enjoyed during festive occasions, weddings, and celebrations, making it a symbol of joy and togetherness.

This dessert not only tantalizes the taste buds but also reflects the dedication and artistry of Goan culinary traditions. Bebinca is a timeless treat that showcases the essence of Goa's culture and love for food.

Ingredients Used In Bebinca

  • Coconut Water [ नारियल पानी ], 4 Cups
    → Fresh Or Canned.
  • Sugar [ चीनी ], 1.5 Cups
  • Egg Yolks [ अंडे की पीली ], 15-16
  • Clarified Butter [ घी ], 1/2 Cup
  • All-Purpose Flour [ मैदा ], 1/2 Cup
  • Nutmeg Powder [ जायफल का पाउडर ], 1/4 Teaspoon
  • Cardamom Powder [ इलायची चूर्ण ], 1/2 Teaspoon
  • Salt [ नमक ], A pinch
  • Water [ पानी ], As desired

.

Method for preparing Bebinca

  • Turn the oven on and set it to 350°F (175°C).
  • Heat the ghee slowly in a pan with a heavy bottom.
  • Add the all-purpose flour to the pan and roast it in the ghee until it turns slightly brown and smells nutty. Don’t let the flour get too hot and burn.
  • In a different pan, mix enough water with the sugar to make a sugar syrup. Heat the mixture over medium heat until all the sugar has dissolved, and the syrup has the consistency of a single string. Put away to cool down.
  • Whisk the egg whites in a big bowl until they are smooth and pale yellow.
  • Pour the roasted flour into the egg yolks slowly while mixing constantly to avoid lumps.
  • Mix the sugar syrup that has cooled well into the egg yolk mixture.
  • Add the coconut milk slowly while stirring constantly to mix all the ingredients together.
  • Mix in some nutmeg powder, cardamom powder, and a little of salt. Blend well.
  • Use butter to grease a baking dish.
  • Pour the mixture you just made into the baking dish that has been greased.
  • Put the baking dish in a bigger, water-filled baking tray or roasting pan. This makes a water bath to make sure the food is cooked evenly.
  • Bake the Bebinca in an oven that has already been warm for about an hour and a half to two hours, or until the top is golden brown and the pie is set. The time it takes to bake can change, so keep an eye on it.
  • Take the Bebinca out of the oven when it’s done and let it cool.
  • Once the Bebinca has cooled, cut it into squares or diamonds.
  • Your tasty Goan Bebinca is now ready to eat.
  • Serve Bebinca as a sweet ending to a meal.
