  • Pork Liver [ सुअर की जिगर ], 150 Grams
    → Cleaned And Cut Into Small Pieces.
  • Pork Heart [ सुअर का दिल ], 150 Grams
    → Cleaned And Cut Into Small Pieces.
  • Vinegar [ सिरका ], 1/2 Cup
  • Onion [ प्याज़ ], 2 Medium
    → Finely Chopped.
  • Ginger-Garlic Paste [ अदरक लहसुन का पेस्ट ], 2 Tablespoons
  • Green Chili [ हरी मिर्च ], 2-3
    → Finely Chopped. Adjust To Spice Level.
  • Cumin Seeds [ जीरा ], 1/2 Teaspoon
  • Cinnamon Stick [ दालचीनी ], 1 inch
  • Cloves [ लौंग ], 4-5
  • Black Pepper [ काली मिर्च साबुत ], 6-8
  • Red Chili Powder [ लाल मिर्च चूर्ण ], 1 Teaspoon
    → Adjust To Taste.
  • Turmeric Powder [ हल्दी चूर्ण ], 1/2 Teaspoon
  • Coriander Powder [ धनिया चूर्ण ], 1 Teaspoon
  • Nutmeg Powder [ जायफल का पाउडर ], 1/4 Teaspoon
  • Cumin Seeds [ जीरा ], 1/2 Teaspoon
  • Mustard Oil [ सरसों का तेल ], 2 Tablespoons

Method for preparing Sorpotel

  • Use vinegar and salt to season the pork, liver, and heart. Set aside for about half an hour.
  • On medium heat, heat oil in a pressure cooker.
  • Put in cumin seeds, cinnamon, cloves, and black peppercorns. Saute for a minute, until the smell is nice.
  • Add onions that have been finely chopped and cook them until they turn golden brown.
  • Add ginger-garlic paste and green peppers that have been chopped very small. Stir-fry for a few minutes.
  • Add the red pepper powder, turmeric powder, coriander powder, nutmeg powder, and cumin powder. Mix well and cook for one minute.
  • Add the pig, liver, and heart pieces that have been marinating. Mix well and cook for a few minutes, or until the meat starts to brown.
  • Add enough water to cover the meat and cook it under pressure until it is soft. After the first whistle, this could take about 15 to 20 minutes.
  • Once the meat is done, open the pressure cooker and let the mixture simmer on low heat to decrease the liquid.
  • Remove the cooked meat pieces with a forked spoon and set them away.
  • Use a blender or hand mixer to make a smooth paste out of the rest of the ingredients in the pressure cooker.
  • Put the paste that you ground back into the pressure cooker.
  • Put the pieces of cooked meat back into the mixture. Mix it well and let it cook for a few more minutes.
  • If you want to change the density, add more water.
  • Taste the food and make changes to the salt and spices as needed.
