  • Ginger-Green Chili Paste [ अदरक-हरी मिर्च पेस्ट ], 1 Tablespoon
  • Turmeric Powder [ हल्दी चूर्ण ], 1/4 Teaspoon
  • Red Chili Powder [ लाल मिर्च चूर्ण ], 1/2 Teaspoon
  • Coriander-Cumin Powder [ धनिया-जीरा पाउडर ], 1 Teaspoon
  • Asafoetida [ हींग ], A pinch
  • Salt [ नमक ], As desired
  • Sugar [ चीनी ], 1 Teaspoon

  • Mustard Oil [ सरसों का तेल ], 1 Tablespoon
    → To Be Used For The Dough, Use Any Oil Of Your Choice.
  • Yoghurt [ दही ], 1 Tablespoon
  • Baking Soda [ बेकिंग सोडा ], 1/4 Teaspoon

  • Mustard Seeds [ सरसों के बीज ], 1/2 Teaspoon
    → To Be Used For Tempering.
  • Sesame Seeds [ तिल का बीज ], 1 Teaspoon
    → To Be Used For Tempering.
  • Curry Leaves [ कढ़ी पत्ता ], A few Grams


Method for preparing Muthia

  • In a mixing bowl, combine whole wheat flour, besan, suji, grated bottle gourd, chopped fenugreek leaves, ginger-green chili paste, turmeric powder, red chili powder, coriander-cumin powder, asafoetida, salt, sugar (optional), and oil.
  • Mix the ingredients well. The moisture from the bottle gourd should be sufficient to form a dough. If needed, you can add a little yogurt or water.
  • Add baking soda and knead the dough until smooth.
  • Divide the dough into small portions and shape them into cylindrical or oval muthias.
  • For Tempering follow these stesp. Steam the shaped muthias in a steamer for about 15-20 minutes or until cooked.
  • Once steamed, let the muthias cool down slightly and then cut them into bite-sized pieces.
  • For tempering, heat oil in a pan. Add mustard seeds and let them splutter.
  • Add sesame seeds and curry leaves. Sauté for a minute.
  • Add the steamed muthia pieces and sauté for a few minutes until they get a slightly crispy texture.
  • Serve the delicious muthia as a snack or breakfast dish.
