  • Turmeric Powder [ हल्दी चूर्ण ], 1/4 Teaspoon
  • Lemon Juice [ नींबू का रस ], 1 Teaspoon
  • Eno Fruit Salt [ इनो फ्रूट सॉल्ट ], 1 Teaspoon
  • Salt [ नमक ], As desired
  • Water [ पानी ], As desired
    → To Be Used For Making Batter.
  • Mustard Oil [ सरसों का तेल ], 2 Tablespoons
    → To Be Used For Tempering, Use Any Oil Of Your Choice.
  • Mustard Seeds [ सरसों के बीज ], 1/2 Teaspoon
    → To Be Used For Tempering.
  • Sesame Seeds [ तिल का बीज ], 1/2 Teaspoon
    → To Be Used For Tempering.
  • Curry Leaves [ कढ़ी पत्ता ], A few Grams
    → To Be Used For Tempering.
  • Green Chili [ हरी मिर्च ], 2-3 Pieces
    → Slit Lengthwise. To Be Used For Tempering, Adjust To Taste.
  • Sugar [ चीनी ], 1 Teaspoon
    → To Be Used Used For Tempering, Optional.

Method for preparing Dhokla

  • Combine besan, suji, yogurt, ginger-green chili paste, turmeric powder, lemon juice, and salt in a mixing dish.
  • Stir in the water gradually until the batter is smooth. The batter should have the consistency of pancake batter.
  • Set aside the batter for 20-30 minutes to allow for fermentation.
  • Lightly oil a steamer or thali.
  • Add Eno fruit salt to the batter just before steaming and combine thoroughly. The batter will froth up.
  • Pour the batter into the oiled steamer or thali and steam for 15-20 minutes, or until the dhokla is well cooked.
  • Remove the dhokla from the steamer and set aside to cool for a few minutes.
  • For tempering follow these steps. Heat the oil in a pan for tempering. Allow the mustard seeds to sputter.
  • Combine sesame seeds, curry leaves, and green chilies in a mixing bowl. Cook for 1 minute.
  • For a little sweeter taste, add a teaspoon of sugar to the tempering.
  • Spread the tempering evenly over the cooled dhokla.
  • Serve the dhokla in preferred forms as a traditional Gujarati snack.
