    → Finely Chopped. To Be Used For Filling.
  • Green Chili [ हरी मिर्च ], 1/2 Piece
    → Finely Chooped. To Be Used For Filling.
  • Coriander Leaves [ धनिया पत्ता ], A few Grams
    → Finely Chopped. To Be Used For Filling, For Garnishing.
  • Chaat Masala [ चाट मसाला ], As desired

  • Black Salt [ काला नमक ], As desired

  • Black Salt [ काला नमक ], As desired
    → To Be Used For Puchka Water.
  • Cumin Powder [ जीरा चूर्ण ], 1/2 Teaspoon
    → To Be Used For Puchka Water.
  • Water [ पानी ], 4 Cups
    → To Be Used For Puchka Water.


Method for preparing Puchka

  • Combine semolina, all-purpose flour, baking soda, and salt to make the Puchka dough. Make a solid dough by adding enough water.
  • Wrap the dough in a moist towel and let aside for 30 minutes.
  • Cut little pieces of dough into small discs. Fry them until they bubble up and become golden brown in heated oil.
  • To remove excess oil, drain the fried discs on a paper towel.
  • Combine boiling potatoes, boiled chickpeas, finely chopped onions, tomatoes, green chilies, and coriander leaves to make the filling. To taste, add chaat masala and black salt.

  • To serve, make a tiny hole in the center of each fried disc (Puchka) and fill it with the prepared filling.
