Aloo Tamatar Ka Jhol

Aloo Tamatar Ka Jhol is a popular vegetarian curry dish in the state of Uttarakhand. It’s scrumptious, plus it’s packed with nutrients. Aloo Tamatar Ka Jhol is a dish made with tomatoes (tamatar) and potatoes (aloo), with the gravy (jhol) being thin and spicy thanks to the addition of cumin, coriander, turmeric, red chilli powder, and garam masala. The cumin seeds are added to the oil once it has been heated in a separate pan. After the cumin seeds have popped, add the chopped onions, ginger, and garlic paste and sauté until the onions are golden brown. Then, add the diced tomatoes and potatoes and cook until the tomatoes are mushy.

‘Aloo Tamatar Ka Jhol’ is a traditional Pahari dish originating from the hill regions of India, particularly Himachal Pradesh and Uttarakhand. This simple yet flavorful dish is a staple in Pahari households, known for its comforting taste and minimalistic preparation. The dish features a light and tangy tomato-based gravy (‘tamatar ka jhol’) that is complemented by tender potato chunks (‘aloo’).

To prepare it, diced potatoes are first sautéed in fragrant mustard oil along with spices like cumin seeds, turmeric, and red chili powder. The diced tomatoes are then added to the pan, creating a base for the gravy. The dish is typically seasoned with traditional Pahari spices, such as jambu (lovage seeds), asafoetida, and fenugreek seeds, which contribute to its unique taste.

As the potatoes and tomatoes cook down, they release their flavors into the thin broth, resulting in a light and aromatic gravy. The dish is usually garnished with fresh coriander leaves for a burst of freshness. ‘Aloo Tamatar Ka Jhol’ is often enjoyed with steamed rice or roti (Indian bread). Its simple preparation and use of locally available ingredients make it a beloved dish that captures the essence of Pahari cuisine.
