Sarson Da Saag is a traditional Punjabi dish that celebrates the bounty of winter greens. This hearty and flavorful delicacy showcases the vibrant flavors of mustard greens, accompanied by spinach and other seasonal greens.

The dish starts with these greens being washed thoroughly and then cooked until tender. They are usually combined with ingredients like onions, tomatoes, green chilies, and ginger to enhance the taste. The mixture is then simmered and slow-cooked to meld the flavors and create a cohesive base.

Spices such as cumin, coriander, and red chili powder are added to infuse the dish with warmth and depth. Often, a touch of maize flour (cornmeal) or gram flour is incorporated to thicken the saag and give it a slightly grainy texture.

The saag is typically garnished with a dollop of butter or ghee, which adds richness to the dish and complements the earthy flavors of the greens. Sarson Da Saag is traditionally served with Makki Di Roti, a flatbread made from maize flour, creating a perfect pairing that offers both texture and taste contrasts.

This dish is not only a culinary delight but also holds cultural significance. It's enjoyed during the winter months when mustard greens are abundant, and its rustic, wholesome character embodies the essence of Punjabi cuisine. • Bring a lot of water to a boil in a large pot. If you’re using them, add mustard greens, spinach, and bathua leaves to the water that is already boiling. Cook the greens in boiling water for about 5 to 7 minutes, or until they are soft.
  • Drain the greens and set them aside to cool.
  • When the greens are cool, cut them into small pieces.
  • Heat ghee over medium heat in a pan with a heavy bottom.
  • Add the chopped onions and cook them until they become clear.
  • Add green peppers, ginger, and garlic that have been finely chopped. Sauté the meat for a few minutes, until it no longer smells raw.
  • Mix well after adding the chopped veggies.
  • Add makki atta (ground corn) and cook for a few more minutes.
  • Add salt and hot chili powder. Blend well.
  • Add water and cook the mixture on low heat while turning it now and then. Let it boil for 20 to 30 minutes to let the flavors come together.
  • Use a wooden masher (a madani) to mash the mixture until it has the right texture. The saag should have some chunks in it.
  • Allow the tastes to develop by letting the food simmer for a little longer.
  • You’re ready to eat your Sarson Da Saag.
