Pinni is a traditional Punjabi sweet treat that encapsulates the wholesome richness of Punjabi cuisine. It's a winter delicacy and is often prepared during festivals, celebrations, and special occasions.

The main ingredient in Pinni is roasted whole wheat flour, which is slow-cooked in ghee (clarified butter) until it turns golden brown and releases a nutty aroma. This process infuses the flour with a deep flavor and creates a base for the sweet. To this roasted flour, various ingredients are added.

Chopped nuts like almonds, pistachios, and sometimes cashews are mixed in, offering both texture and richness. Jaggery or sugar is added to sweeten the mixture, along with spices like cardamom and nutmeg that lend their aromatic essence.

Once all the ingredients are combined, the mixture is shaped into small round or oval shapes and allowed to cool. Pinni is dense, hearty, and nutrient-rich due to the inclusion of whole wheat flour, nuts, and ghee. It's often enjoyed during cold weather to provide warmth and energy.

Pinni carries a sentimental value as it's often associated with familial and cultural traditions. Its rustic charm and the blend of flavors create a distinctive and memorable dessert that represents the heartiness and flavors of Punjabi cuisine.

  • Low-heat roast the flour in ghee until it gets golden brown and has a nutty scent. This might take around 15-20 minutes. Stir constantly to avoid scorching.
  • When the flour has finished roasting, add the grated jaggery to the pan. Cook for a few minutes longer, until the jaggery melts and combines with the flour.
  • Combine the chopped mixed nuts with the mixture.
  • Heat a tiny amount of ghee in a separate small pan and sauté the edible gum until it puffs up. Be cautious, since the gum may spatter. Drain and combine with the pinni mixture.
  • Mix in the cardamom powder for taste.
  • Turn off the heat and set aside to cool somewhat.
  • Shape the ingredients into little round balls (pinnis) using your hands while it is still warm.
  • If the mixture is clinging to your hands, apply a little ghee to lubricate them.
